Thanksgiving Day 2011
This Thanksgiving we spent it here at home with Colby's family. We had dinner at 11:30 am. Which was weird, but great! Dinner was mostly cooked the day before which meant there wasn't much to do the morning of. Plus it got dinner over with nice and early. Then it left all day to play games, take naps, snack on leftovers, go for walks and we got McKay's big boy quilt tied.
We had a very nice day. The weather was beautiful for the end of November. Perfect day for a walk to the ward building and back.
Dinner was amazing and delicious! I made the mashed potatoes. They were so good! (A little runny from being cooked the day before and left in the water.) And we had a delicious turkey that Davis won at the turkey-shoot this year. It was tender and juicy.
I really was a great day! Now it is time to get the Christmas decor officially going. I can't wait for Christmas this year!

Christmas Time & Thanksgiving...
Or the other way around. The beautiful fall colors have all turned to brown and have gotten mushy. The chill in the air has gotten much more intense and the Christmas shopping has began. Okay, so it's almost done but you know...
I love Christmas! As many people do. It is such a festive and fun time of year. It makes all this white powder worth it.
Thanksgiving is just a few days away. I don't think I can even wait until then to set up my tree. We got a 4 ft. pre-lit tree for $20 at one of my favorite stores. And although I don't like fake trees, it will work for now. At least until we get our own place and McKay is older. All my ornaments are at my parents because I don't have room to store them here. That is really the main thing keeping me from setting it up tonight.
This year is a lot more fun then last year. McKay is much more aware of things going on. He gets entertained by the bright lights and music of the seasons. Although the secret presents from Santa will have to wait another year, everything else will be great!
Like I had mentioned, almost all of our shopping is already done. Now, there are some good things and bad things about that. It's good cause I avoided lots of crazy people and lines. But, it makes me want to keep buying, and I really want to open everything now. But, I will wait. If I have too...
I got Colby some really great stuff that I am excited about. I sure hope he likes them as much as I do.
Well, Thanksgiving this year is with the Forbush's. Yum Yum! Yams, turkey, mashed potatoes. I am even looking forward to cranberry sauce. Which is really weird. It will be a very good day. A new shopping tool...
This wasn't my idea, so I can't take credit. But I love it!
In Word make a page that is horizontal. Make 3 columns...
In your first column you write a list of your meals.
In the second and third column write your shopping list separated by categories; produce, dairy, meats, etc.
Than you can fold it so that your menu list can be hung on the fridge (or wherever you'd like) and the shopping list can be folded underneath and hidden nicely. The advantage or having a list like this, is you have your menu list on a smaller piece of paper with you when you shop. Plus the separated categories is handy so you aren't running ramped all over the store.
You could also do something like this for Menu's and recipes...

Life is Good!
I love being able to take time to just count my blessings. This morning I was pleasantly awakened by McKay eating 'breakfast' (Cheerios's and a cheese stick?), and asking Daddy so nicely that he was all done and ready to get down. Instead of the usual screaming and throwing the rest of his food on the floor.
We had stayed up late talking and playing games with Colby's family, and I sure could feel it this morning. But, my sweetheart Colby got up and took care of McKay with out a sound, letting me sleep in. It was wonderful to wake up to happy sound of our son, finally learning a few table manners. It helped me to take a look at my life and think of how blessed I am. I have a husband who loves me like crazy (he tells me that all the time:) and a sweet son, who is just that, sweet! And adorable and all that... of course!
But with my wonderful family, I am blessed with a roof (and 2 floors;) over my head, a very warm comfy big bed, other family and being able to stay home with our son. Among an endless list of other things.

The begining of Fall
Colby is starting a new job on Monday. This is an exciting and scary time for us. His new work will be just a few blocks a way, which by far beats the 30 minute commute. It will also allow him to be home with us more, and have time for school.
At his old job he was so constantly busy he would go in 1-2 hours early every morning, and come home about 1-5 hours late. The extra money was great, but with him working full-time, going to school full-time and having a family was a little much. We decided we needed to set our priorities straight. Money isn't everything. We know how important school is and of course he can't give up his family. So we made an adjustment in where and who he works for. He will be working part time, which is both wonderful and scary. With me being a Stay at Home Mom, I was a little concerned on cutting our income in a little more than half. But because he was working so much OT we were able to save and pay off almost all of our debt.
We also know that the Lord will provide whatever we need as long as we are paying our tithing and doing what we need to. I have faith that Heavenly Father will continue to look out for us. Just like he has in SO many ways. We have a beautiful healthy son to prove it.
So on we go, looking forward to the future. And we will always, 'keep moving forward'.

It's Friday, which usually means it is take out Homework Party time. But not tonight. Grandma and Grandpa are coming to babysit the little guy, and Colby and I are going on a much needed date!
But last night, we had...
April's Taco Salad:
1 Lb. Hamburger
1/2 head of Ice burg Lettuce, shredded
1 C. Cheese, shredded
1 can Olives, sliced
2 med. Tomatoes, diced

Tonight's Dinner
On the Menu:
Homemade Hamburgers and Crispy Fries
I got this recipe from America's Test Kitchen. I tweaked it a little to make it fit my family and budget. But either way, it makes some really good easy hamburgers.
1 Lb. Hamburger
1 Sm. Onion
4 Slices of American Cheese
1/2 C. Mayo
1/3 C. Katsup
1/2 tsp. Mustard
Salt, pepper, garlic powder (to taste)
4 Hamburger Buns, toasted
2 Sm. yellow Potatoes
Oil, enough to cover potatoes
First, prepare the fries. Start by cutting the 'sides' off the potatoes so there is a flat surface to cut on. Cut the potato in half. Slice the pot. in about 1/4" slices, and slices again, about 1/4" thick. Once all the pot. are cut, put them into a pot and cover with COLD oil (which ever kind you prefer). Bring the oil to a RAPID boil. Do NOT stir or touch the potatoes. Set the timer for 10 minutes. After 10 minutes you can stir them and get any stuck on the bottom, off. Keep boiling until golden brown. (Lighter if you don't like them crispy.) Lay them out on a cookie tray covered in paper towels. Salt as desired and let cool for a few minutes before serving.
Now, once you have the fries boiling, you can start the hamburgers. According to ATK (America's Test Kitchen) the secret to a good burger is to not over handle the meat. They like to use steak and rib tips, ground up. But I prefer plain old hamburger. I break them into 1/4's, and press them into patties, with the least amount of handling possible. Cook them on the stove in a frying pan. Salt, pepper and garlic powder each side. Cook on one side until browned. Flip and season. Cook on other side until cooked though. Lower heat and add cheese to each side. You can use the same pan for toasting the buns and cooking the onions, but it's easier with two separate pans.
Special Sauce- Mayo, Katsup, Mustard and salt added together and mixed well.
To prepare: On bottom bun put a hefty amount of sauce. Add the hamburger, and cooked onions. Top with top bun and serve with warm fries.
It's so good! Should be eaten maybe once a month. But makes my mouth water just thinking about it. Try it!

Colby's Thin Crust Pizza:
1 pkg. Betty Crocker Pizza Crust
1 cup Cheese
1 cup Sauce
1/2 cup Mushroom's, sliced
1/2 cup Green Pepper, chopped
1/4 cup Peperoni
1/4 cup Pineapple
1/4 cup Olvies, sliced
Mix up Pizza Crust by following the instructions. Bake at 440 degrees for 7-10 minutes until lightly golden brown. Add sauce and toppings. Bake for another 5-7 mintues. Add cheese and put bake into oven until cheese is melted.
Let stand 2 minutes. Serve and enjoy hot and yummy homemade pizza!
Best Pizza ever!

Tonight's Dinner
Take out.
With Colby and I both in school, we have been spending our Friday nights as homework parties. This means, we get take out for dinner, the kid goes to sleep a little early and Mommy and Daddy get to spend a romantic evening studying together. School can be rough sometimes! This is our way of making it fun.
Last week we got Chinese. Tonight? Cafe Rio!
With Colby and I both in school, we have been spending our Friday nights as homework parties. This means, we get take out for dinner, the kid goes to sleep a little early and Mommy and Daddy get to spend a romantic evening studying together. School can be rough sometimes! This is our way of making it fun.
Last week we got Chinese. Tonight? Cafe Rio!
A few shopping tools I like to use for my small family.
1. I love pre-grated cheese! It can be more cost effective if you buy a big bag of grated cheese on sale. (Walmart had a huge bag for around $6 bucks.) It not only can save a little money, it also saves time and more time! I use grated cheese on a lot of the meals I make. Not having to grate all that cheese is completely worth it! And a big bag lasts me more than a few weeks. Love that!
2. Waste not. I hate having to buy a big stalk of celery when I only need a few pieces. Or when I only need 4 hot dog buns, and have to buy them packaged more. I found a great way to only buy what I need so there is less money going down the drain from wasted food. Find a Grocery store with a bakery. You can buy the exact amount of any kind of bakery item you need for your meals. And in the produce section, there are area's where you can buy just 2 carrots. Or only 4 stalks of celery. I love not wasting food.
3. Buying in bulk can be a money saver. If you have access to a big freezer, buy in bulk. Things like cheese, onions, green peppers and many kinds of fruit can be cut, put in freezer Zip Lock Bags and frozen. This is a good way to always have things like onion, on hand. Milk freezes too! If you put it in 1/2 gal. jugs, they fit better in the freezer. I love buying Costco's delicious strawberries in the summer. But we can only eat 1/3 of it before it goes bad. I like to get 2 or 3 freezer bags and use one for sliced strawberries, and the other for whole strawberries. Than we get to enjoy good strawberries all year long.
4. Plan ahead. My Mom taught me to plan meals before going shopping. It is a good way to have a plan, a list in hand, and less things you don't need in your cart. But sometimes it can be hard to come up with things to plan. What I did is, write down everything recipe and thing we have eaten in the past on a piece of paper, (or type it up on the computer, if you are smart like that:). I like to have a quiet place to think when I plan meals. Than I pick out things to eat from my list. For example, Meat loaf, mashed potatoes and cooked carrots for one night. Macaroni Salad and hot dogs for the next, and so on. My Mom likes to assign each meal a day. But I like to be more flexible. Some days things are crazy! I have homework due, Dr. appt's, and who know's what else and I just don't want to make anything big. So I pick from my list something easier. After I have my 1 or 2 weeks worth of meals, I like to write down each thing I need for each meal, down to the salt and pepper. There is nothing worse that forgetting something you need and having to run to the store. Than I begin to make my shopping list. After a review my ingredients list, I figure out what I need (these go on the shopping list) and what I have. Than I am ready to go to the store!
I only plan dinners. When my family is bigger and older I will plan out what I will make for breakfast, lunch and dinner. But as of now this is what works for us. I always keep things I know Colby, McKay and I like to eat for breakfast and lunch on hand. Than I eat and fix whatever sounds good that day.
You have to try different things, and be flexible. Experiment and find what works for you!

Big Boy Quilt
McKay is getting much to big for his crib. Time to start thinking about digging the twin bunk-beds out of storage. Along with bringing his new twin bed to the house, he needs a new big boy quilt. His Grandma (Colby's Mom) and I, (Okay, mostly her) are making a HUGE quilt for him out of all the receiving blankets I got that he has almost never, or never been small enough to use. So I cut them up into 61/2 inch squares and together, we have been sewing them together.
The top of the quilt is done!! It looks very cute! Many different patterns, randomly displayed to be pleasing to the eye and create unity. I can't wait to get it finished so we can get him in this Big Boy Bed.
Goodness. Where did the time go? I know it's cliche, but it seems like just yesterday I was bringing him home from the hospital and learning how to be a parent. Now, just a few days later (seems like) I am getting him ready for his own bed. One he will probably have until at least high school. Time fly's. It really does. My baby is a full fledged Toddler now. A very big Toddler, who wears 2T clothes.
Okay, enough of that. Can't wait to see the whole quilt finished! It is going to be really cute! Oh-and the best part, is that there was enough fabric left over to cut out 41/2 inch squares to make a crib size quilt for a perhaps future sibbling. (I said, perhaps future.)

2 C. Macaroni (or any small to medium pasta)
1/2 C. Miracle Whip
1/2-3/4 C. Mayonnaise
1 Sm. Cucumber, chopped small
2 Eggs, cooked, chopped small
2 Celery stalks, chopped small
1/4 Med. Onion, chopped small
1/4 C. Cheddar Cheese, shredded
Salt, Pepper and Garlic Powder to taste
Cook Macaroni, rinse with cold water and put in bowl. Add all other ingredients. Stir to coat evenly. Always taste. Refrigerate for at least 20 minutes, covered before serving.
Yield: 4-1 1/4 C. servings
Note: It's always better made the day before. You can also add just about whatever you want to this salad. Which is what makes it so good. Adding a yellow or red pepper will help to add some yummy color. Experiment! That's what makes cooking...creating.
Hot Dogs:
Simply warm them up on the stove top or BBQ. You can always serve them with a bun and all the toppings. But tonight's highlight is the Salad.

Goodbye to Summer, Hello to Fall!
The cooler weather of Fall is very much welcomed in my life. While the Summer heat brought many fun times and new enjoyable memories, I am glad to see Fall.
This Summer we enjoyed going swimming at the Rec Center, where McKay loved swimming, the slides and not loved the water features getting him wet.
We had not just one, but two family weddings this Summer. Shannon Kerbaugh joined our family, (on the Forbush side), when she was sealed to Colby's brother Dexter, on August 13 in the Salt Lake Temple. Almost a month prier to Dexter and Shannon's wedding, my brother Jonathan married Anisa Bennett, on July 16 in the St. George Temple. They are both GREAT additions to our families.

Earlier this Summer we had our family pictures taken. Colby's sister, the lovely and talented Jenna Norwood, took them for us. Later in the Summer, right before Dexter and Shannon's wedding, we had the Forbush side's pictures done. It was actually the most painless, fastest experience I have ever had when it comes to family pictures.
Over Labor Day weekend, we spent the day with Colby's family up in the beautiful canyons. McKay loved roasting marshmallow's and playing near the water. He also did not take a nap and his new shoes fell in the water, after about 3.5 seconds, after our arrival. But that's okay. His cuteness makes up for all the not perfect moments.
For part of our 'End of Summer' party, we had my brother Blaine and his wife Angela, and Colby's brother Davis, over for dinner. We made Tin Foil Dinners in the fire pit out back. They were so good. They tasted just like camping feels. It was a hot but beautiful evening. A very nice break before school began on Monday.
Summer seemed too short this year, sense the Winter never wanted to end this year. But it was just enough time to really enjoy this beautiful Fall cool-down.

Welcome!
I am only a little behind times. I decieded it was high time the world knew what is going on in our lives. I hope to share the little secrets on how I stay mostly sane. ;) As well as new recipe inventions and fun new idea's. I hope you'll enjoy, a day in the life of a Forbush.
